Historically, sherry casks or ‘butts’ were used as shipping casks in which sherry was sent to Britain for bottling. It is likely that they were old butts from the soleras that the bodegas wanted to replace, however it quickly became apparent that these casks were very well suited to the maturation of malt whisky. The majority of sherry is matured in American oak to produce Fino sherries, although some producers of Amontilado, Olorosso and Pedro Ximenez sherries use Spanish oak.
The sherry cask produces a dark amber whisky, reminiscent of maple syrup.
In contrast to Bourbon barrel matured whisky there is chocolate, sherry and slight traces of cloves.
Again full-bodied with raisins and warm spices overlaid with sherry flavours. The sherry casks are well balanced with the Old Pulteney characteristics and enhance rather than dominate the spirit. Full bodied, spicy and very long-lasting.
